Cocktail Preparation

Prepare Honey Simple Syrup
In a small saucepan, combine equal parts honey and water. Heat gently until the honey dissolves. Allow to cool before using.

Shake the Ingredients
In a cocktail shaker, combine Bar Hill Tom Cat Gin, Averna, fresh lemon juice, Fee Foamer, and honey simple syrup. Fill the shaker with ice.

Shake Vigorously
Shake the cocktail vigorously for about 15-20 seconds to combine and chill the ingredients.

Strain and Serve
Strain the mixture into a chilled coupe or cocktail glass. Optionally, you can double strain to remove any ice shards.
