Cooking Rice

    Prepare the Rice

    Rinse the short grain rice under cold water until the water runs clear. In a pot, combine the rinsed rice with 2 cups of water and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and water is absorbed.

Preparing Vegetables

    Cook the Turnips

    Peel and dice the turnips into small cubes. In a pot of boiling salted water, add the diced turnips and cook for about 10 minutes until tender. Drain and set aside.

    Prepare the Legumes

    In the same pot, blanch the green peas and green beans for about 3-4 minutes until bright green and tender-crisp. Drain and set aside. If using fresh lima beans, cook them until tender in the same manner.

Combining Ingredients

    Mix and Serve

    In a large bowl, combine the cooked rice, turnips, green peas, green beans, and lima beans. Drizzle with olive oil, season with salt and black pepper, and toss gently. Garnish with chopped fresh parsley before serving.
