Method

Preparation

  1. 1

    Infuse the Ingredients

In a large glass jar, combine the Barolo wine, granulated sugar, cinchona bark, coriander seeds, cardamom pods, star anise, cloves, orange zest, and vanilla bean (split open). Seal the jar tightly and let it steep in a cool, dark place for about 2 weeks. Shake the jar gently every few days.

  2. 2

    Strain the Mixture

After 2 weeks, strain the mixture through a fine mesh sieve or cheesecloth into another clean glass jar or bottle. Ensure that all solids are removed from the liquid.

  3. 3

    Add Almond Extract and Alcohol

Add the almond extract and neutral alcohol to the strained liquid. This will enhance the flavor and preserve the drink.

  4. 4

    Bottle and Age

Transfer the mixture into bottles. Seal them tightly and allow the Barolo Chinato to age for at least 1 month before serving. This will allow the flavors to meld.
