    Sauté the Garlic

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

    Cook the Tomatoes

    Add the halved cherry tomatoes to the skillet and cook for about 5 minutes, stirring occasionally, until they begin to soften.

    Add Mussels and Wine

    Stir in the cleaned mussels and white wine. Cover the skillet and cook for about 5-7 minutes, or until the mussels have opened.

    Season the Sauce

    Season the sauce with salt, black pepper, and chopped basil. Stir well.

    Cook the Trout

    While the sauce is simmering, in a separate pan, season the trout fillets with salt and pepper. Cook them skin-side down over medium heat for about 4-5 minutes on each side, or until cooked through.

    Serve

    To serve, place the cooked trout on a plate and spoon the tomato and mussel sauce over the top. Garnish with additional basil if desired.
