Salmon Confit Preparation

Prepare the Salmon

Preheat oven to 200°F (95°C). In a baking dish, combine olive oil, thyme, garlic, and salt. Place salmon fillets in the dish, making sure they are submerged in oil.

Cook the Salmon

Cover the dish with foil and cook in the oven for 1.5 to 2 hours, until the salmon is tender and flakes easily.

Make the Béarnaise Mayonnaise

In a mixing bowl, whisk together egg yolks, white wine vinegar, chopped tarragon, and Dijon mustard. Slowly drizzle in vegetable oil while whisking continuously until the mixture thickens. Season with salt and black pepper to taste.

Cook the Vegetables

Boil fingerling potatoes in salted water until tender, about 15-20 minutes. In a separate pot, blanch yellow beans in boiling water for 3-4 minutes, then transfer to ice water to stop cooking.
