Method

Preparing the Stuffed Eggplant

    Prep the Eggplant

    Preheat the oven to 180°C (350°F). Cut the eggplants in half lengthwise and scoop out the insides, leaving a shell about 1 cm thick. Chop the scooped-out eggplant flesh and set aside.

    Cook the Filling

    In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until translucent. Add chopped eggplant flesh and diced smoked ham, cooking until soft. Season with salt and black pepper.

    Stuff the Eggplants

    Fill the eggplant halves with the mixture, pressing down gently. Top with grated Parmesan cheese.

    Bake

    Place stuffed eggplants on a baking sheet and bake for 25-30 minutes or until the eggplants are tender and the cheese is golden.

Making the Tomato Sauce

    Prepare the Sauce

    In a saucepan, combine canned diced tomatoes, vodka, and special piment. Bring to a simmer and cook for 10 minutes.

    Finish the Sauce

    Stir in heavy cream and simmer for an additional 5 minutes. Season with salt and black pepper to taste. Add fresh basil leaves before serving.

Serving

    Combine and Serve

    Plate the stuffed eggplants and drizzle generously with the vodka tomato sauce. Garnish with additional basil if desired.
