Preparing the Corn Coulis

In a saucepan, combine the fresh corn kernels and vegetable broth. Bring to a boil and then simmer for about 10 minutes until the corn is tender.

Transfer the corn mixture to a blender, add the heavy cream, salt, and black pepper. Blend until smooth. Adjust seasoning if necessary, and keep warm.

Marinate the Chanterelles
Add chanterelle mushrooms to the marinade and let it sit for at least 30 minutes to absorb the flavors.
Cooking the Scallops

Sear the Scallops
In a large skillet, heat the butter and olive oil over medium-high heat. Season the scallops with salt and black pepper. Once the skillet is hot, add the scallops and sear for about 2-3 minutes on each side until golden brown and cooked through.

On a plate, create a base with the corn coulis, arrange the seared scallops on top, and garnish with the marinated chanterelles.
