Preparation of Dough

Mix the Dough
In a large mixing bowl, combine the active sourdough starter and warm water. Mix in the all-purpose flour and salt until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

First Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise at room temperature for 4-6 hours, or until doubled in size.
Shaping and Topping

Preheat and Prepare Baking Pan
Preheat your oven to 425°F (220°C). Grease a baking pan with olive oil.

Shape the Dough
Once risen, gently punch down the dough and transfer it to the prepared baking pan. Stretch and shape it to fit the pan.

Second Rise
Cover the dough with a damp cloth and let it rise for another 30-45 minutes.

Add Toppings
After the second rise, use your fingers to create dimples in the dough. Drizzle with olive oil, sprinkle with sea salt, and top with marinated anchovies, roasted peppers, fresh rosemary, and Avonlea cheese.

Bake in the preheated oven for 20-25 minutes, until golden brown and crispy.
