Method

Making the Burrata

    Prepare the Milk

    In a large pot, combine whole milk and heavy cream. Heat over medium heat until it reaches 190°F (88°C). Stir occasionally to prevent scorching.

    Add Vinegar and Rennet

    Remove from heat and add white vinegar, stirring gently. Let it sit for 5 minutes. In a small bowl, dissolve rennet in water and add to the milk mixture, stirring gently for another minute.

    Curd Formation

    Cover and let it sit undisturbed for 5-10 minutes until curds form. Cut the curds into small squares.

    Heat the Curds

    Gently heat the curds over low heat, stirring occasionally, until they reach 105°F (40°C). Remove from heat and let it sit for 5 minutes.

    Drain and Form Cheese

    Using a slotted spoon, transfer curds to a colander lined with cheesecloth. Gather the cloth and twist to drain excess whey. Form into a ball and place in cold water for 30 minutes.

    Make the Burrata Center

    Take a small piece of the cheese and flatten it. Fill with some of the drained curds, then fold and seal to create a pouch.

Making Croutons

    Prepare the Bread

    Preheat the oven to 375°F (190°C). Cut the bread into small cubes.

    Season the Croutons

    In a bowl, toss the bread cubes with olive oil, garlic powder, and salt until well coated.

    Bake the Croutons

    Spread the seasoned bread cubes on a baking sheet and bake for about 10-15 minutes, or until golden and crispy.

Assembling the Dish

    Plate the Ingredients

    On a serving platter, arrange the burrata, seasonal fruits and vegetables, and sprinkle croutons on top.

    Finish with fresh basil leaves and a drizzle of olive oil, if desired.
