Making the Burrata

Prepare the Milk Mixture
In a large pot, combine the whole milk and heavy cream. Heat over medium heat until it reaches 190°F (88°C).

Add Lemon Juice and Rennet
Remove from heat and stir in lemon juice and dissolved rennet in water. Let sit for 5-10 minutes until curds form.

Cut the Curds
Using a long knife, cut the curds into 1-inch pieces and let them rest for 5 minutes.

Cook the Curds
Gently heat the curds over low heat, stirring occasionally for about 5-10 minutes until they are firm.

Drain and Rinse
Using a slotted spoon, transfer the curds to a colander lined with cheesecloth. Rinse under cold water.

Form the Burrata Shell
Gather the corners of the cheesecloth and form into a ball. Twist to seal and shape into a ball. Place in a bowl of salted water.
Making the Stracciatella Filling

Prepare the Filling
In a bowl, combine torn fresh mozzarella, heavy cream, and salt. Mix gently until combined.

Assemble the Burrata
Using a sharp knife, carefully create a small opening in the burrata shell. Spoon in the stracciatella filling and seal the burrata.
