Duck Tartare Preparation

    Prepare the Duck

    Finely dice the duck breast and place it in a mixing bowl. Add shallots, capers, Dijon mustard, Worcestershire sauce, egg yolk, chopped fresh herbs, salt, and black pepper. Mix well and adjust seasoning to taste.

Fried Shiso Preparation

    Fry the Shiso Leaves

    Heat vegetable oil in a deep pan over medium heat. Once hot, carefully add the shiso leaves and fry until crispy, about 10-15 seconds. Remove and drain on paper towels.

Béarnaise Mayonnaise Preparation

    Make the Béarnaise Mayonnaise

    In a bowl, whisk the egg yolk with white wine vinegar and dried tarragon until combined. Slowly drizzle in vegetable oil while whisking continuously until emulsified. Stir in fresh tarragon, and season with salt and black pepper to taste.

Assembly

    Serve

    To serve, plate the duck tartare and drizzle with Béarnaise mayonnaise. Garnish with fried shiso leaves on top.
