Prepare the Crust

    Make the Dough

    In a large bowl, mix the flour, sugar, and salt. Cut in the butter until the mixture resembles pea-sized crumbs. Stir in the ice water until the dough comes together. Divide into two discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

    Roll Out the Dough

    On a floured surface, roll out one disc to fit your pie dish. Place it in the dish and trim the edges. Roll out the second disc for the top crust.

Prepare the Filling

    Prepare the Apples

    Peel, core, and slice the apples. In a bowl, toss the apples with granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice. Set aside.

Assemble and Bake

    Assemble the Pie

    Preheat the oven to 425°F (220°C). Fill the crust with the apple mixture and dot with butter. Place the top crust over the filling, and seal the edges. Cut slits in the top to allow steam to escape.

    Add Toppings

    Distribute the foie gras pieces evenly on top of the pie filling. Sprinkle with shredded cheddar cheese.

    Bake the Pie

    Brush the top crust with the beaten egg. Bake for 15 minutes, then reduce the temperature to 350°F (175°C) and bake for an additional 30-35 minutes or until the crust is golden brown and the apples are tender.
