Prepare the Garlic Butter
In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté for about 2 minutes until fragrant. Remove from heat and let it cool slightly.

Make the Stuffing
In a mixing bowl, combine the crab meat, cream cheese, half of the Parmesan cheese, parsley, and half of the garlic butter. Season with salt and black pepper. Mix until well combined.

Prepare the Chicken
Preheat the oven to 375°F (190°C). Carefully cut a pocket into each chicken breast, being careful not to cut all the way through.

Stuff the Chicken
Stuff each chicken breast with the crab mixture, then secure the opening with toothpicks if necessary. Brush the outside of the chicken breasts with olive oil and season with salt and pepper.

Bake the Chicken
Place the stuffed chicken breasts in a baking dish. Drizzle the remaining garlic butter over the top and sprinkle with the remaining Parmesan cheese. Bake for 25-30 minutes or until the chicken is cooked through and juices run clear.

Remove from the oven and let it rest for a few minutes. Serve warm, garnished with additional parsley if desired.
