    Prepare the Collard Greens

    Rinse the collard greens thoroughly under cold water. Remove the thick stems and chop the leaves into bite-sized pieces.

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and red pepper flakes, cooking for an additional 1-2 minutes.

    Add the smoked ham hock to the pot, followed by the chopped collard greens. Stir to combine.

    Pour the chicken broth over the collard greens and ham hock. Bring the mixture to a boil, then reduce the heat to low.
