In a large bowl, mix the flour, salt, and sugar. Cut in the butter until the mixture resembles coarse crumbs. Stir in the ice water, a tablespoon at a time, until the dough comes together. Divide the dough in half, shape into disks, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Apple Filling
In a large bowl, toss the sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg (if using), and lemon juice. Set aside for about 15 minutes to let the flavors meld.

Preheat your oven to 425°F (220°C).

On a lightly floured surface, roll out one disk of dough to fit your pie dish. Place it in the dish and fill with the apple mixture.
