    Prepare oysters

    Preheat the oven to 425°F (220°C). Scrub the oyster shells under cold running water to remove grit. Place the oysters on a baking sheet lined with rock salt or crumpled foil to keep them level. If oysters are closed, shuck them carefully: hold flat shell down, insert shucking knife at hinge, twist to pop, run knife under oyster to free muscle and retain liquor. Leave oysters in their half shells with liquor intact.

    Season each oyster lightly with a few drops of lemon juice and a very light pinch of coarse salt and cracked black pepper. This sets a flavorful base and complements the topping.

    Cook bacon and aromatics

    In a small skillet over medium heat, cook the finely diced bacon until crisp, about 5–6 minutes. Remove bacon with a slotted spoon to a paper towel to drain, leaving about 2 tablespoons of bacon fat in the pan (if there is excess, pour off until roughly 1–2 tbs remain). Add the minced shallot to the hot fat and sauté 1–2 minutes until softened and translucent. Add the minced garlic and cook 20–30 seconds until fragrant. Remove skillet from heat.

    Wilt and combine greens

    Return skillet (off heat or back to low) and add the chopped spinach, stirring until wilted, about 1–2 minutes. If needed, add a splash (1 tsp) of water to help wilt. Transfer the wilted spinach and cooked aromatics to a bowl. Stir in the chopped parsley, green onions, chives and optional tarragon. Mix in the cooked bacon (reserve a small pinch for topping if desired).

    Make the topping

    To the spinach-herb-bacon mixture add the grated Parmesan, panko breadcrumbs, melted butter (2 tbs from ingredients), and the cream. Season with 1 tsp salt (or to taste) and a few grinds of black pepper. Mix thoroughly so the breadcrumbs and cheese bind the mixture into a moist, spreadable topping. Taste and adjust seasoning—keep in mind the bacon and Parmesan are salty.

Assembly & baking

    Top oysters and bake

    Divide the topping evenly among the three oysters, pressing gently to mound the mixture over each oyster so it contacts the oyster liquor. Sprinkle the reserved bacon bits on top if set aside. Brush or drizzle each topping with the melted butter (1 tbs) to encourage browning. Place the baking sheet in the preheated oven and bake at 425°F (220°C) until the topping is golden and the oysters are hot around the edges, about 8–10 minutes. For a crisper, browned finish, switch oven to broil for 1–2 minutes—watch closely to avoid burning.

    Remove oysters from oven and let rest 1 minute. Garnish with a small squeeze of fresh lemon and a sprinkle of chopped parsley. Serve immediately on a platter (nest on rock salt or lemon halves to stabilize).
