    Rinse and purge clams

    Place littleneck clams in a large bowl. Mix cold water with coarse salt until dissolved and pour over clams so they are submerged. Let sit 20–30 minutes to purge sand, then lift clams out (do not pour liquid back over them). Rinse each clam under cold running water to remove remaining grit.

    Open clams briefly

    Set a large pot of water to a gentle simmer. Add clams and cover for 2–3 minutes just until shells begin to open slightly. Remove clams promptly and let cool until safe to handle — this helps loosen meats for removal while keeping them tender. Reserve cooking liquid for later if desired (optional).

Stuffing

    Prepare chouriço

    Remove casing from the chouriço and finely dice the meat. If very fatty, blot excess oil with paper towel so the stuffing isn't overly greasy.

    Sauté aromatics and chouriço

    Heat a 10-inch skillet over medium heat. Add butter and 1 tablespoon olive oil. When the butter foams, add diced chouriço and cook 2–3 minutes, stirring, until it releases oil and begins to brown. Add minced onion and cook 3–4 minutes until translucent. Add minced garlic and cook 30–45 seconds until fragrant.

    Deglaze and combine

    Pour in the 2 tablespoons dry white wine to deglaze the pan, scraping any browned bits. Cook 1 minute to reduce alcohol. Stir in lemon zest, lemon juice, smoked paprika, red pepper flakes, chopped parsley, salt, and pepper.

    Add breadcrumbs and cheese

    Remove skillet from heat and add 3⁄4 cup dry breadcrumbs and 1/4 cup freshly grated Parmesan. Mix until combined; the residual fat and butter should moisten the crumbs. If mixture seems too dry, add up to 1 tablespoon extra olive oil or a splash (1–2 tsp) of reserved clam cooking liquid or water. Taste and adjust seasoning.

    Prepare clams for stuffing

    Carefully pry open each clam fully (if already opened slightly, open gently) and remove the top shell. Keep the clam meat in the bottom shell. If meats came out during the brief steaming, return them to their respective bottom shells, trimming any tough bits. Pat shells lightly dry so stuffing adheres.

    Portion stuffing into clams

    Spoon about 1 to 1.5 teaspoons of the chouriço breadcrumb mixture onto each clam (depending on shell size), pressing gently to pack. Arrange stuffed clams on a baking tray or in a shallow baking dish so they sit level. Drizzle a tiny bit of olive oil (about 1 tsp total across all clams) evenly over the tops.

    Bake to finish

    Preheat oven to 425°F (220°C). Bake stuffed clams on the middle rack 8–10 minutes until tops are golden and heated through (cheese melted and crumbs crisp). If you prefer a broiled finish, broil on high 1–2 minutes watching carefully to avoid burning.

Garnish & serving

    Remove clams from oven and let rest 1–2 minutes. Sprinkle coarsely chopped parsley over the clams and serve immediately with lemon wedges for squeezing. Serve warm as an appetizer — about 2 clams per person if served with other appetizers, 4–6 if main.
