    Prepare the Beef

    Divide the ground beef into 4 equal portions (4 oz each). Form them into balls without overworking the meat.

    Cook the Burgers

    Heat a cast-iron skillet over medium-high heat. Once hot, place the beef balls in the skillet and smash them down with a spatula to form patties. Season with salt and pepper.

    Add Cheese

    Cook the patties for about 3-4 minutes on one side, then flip them. Place one slice of aged American cheese on each patty and cook for another 2-3 minutes until the cheese is melted.

    Toast the Buns

    While the burgers are cooking, spread garlic butter on the cut sides of the brioche buns. Place them face down in a separate skillet over medium heat and toast until golden brown.

    Assemble the Burgers

    On the bottom half of each toasted bun, layer on diced onion, house-made pickles, and the burger sauce. Add the cheese-topped patties and place the other half of the bun on top.
