Prepare the Turkey
Preheat your oven to 325°F (160°C). Rinse the whole turkey under cold water and pat it dry with paper towels. Rub the entire turkey with olive oil, ensuring to cover it evenly.

Season the Turkey
In a small bowl, combine salt, black pepper, garlic powder, and onion powder. Rub this spice mix all over the turkey, including inside the cavity.

Check for Doneness
Use a meat thermometer to check that the internal temperature has reached 165°F (75°C) in the thickest part of the breast. Once done, remove the turkey from the oven and let it rest for 30 minutes before carving.

Prepare the Sandwich
Once the turkey has rested, pull apart the meat into slices or hand-pulled chunks. Toast the slices of bread if desired.

Assemble the Sandwich
On each slice of bread, spread a layer of mayonnaise. Add a generous amount of turkey, followed by provolone cheese, lettuce leaves, tomato slices, and onion slices. Top with another slice of bread.
