    Preparing the Potatoes

    Start by washing the Russet potatoes thoroughly to remove any dirt. Peel the potatoes if desired, then cut them into evenly sized sticks, about 1/4 inch thick.

    Soaking the Potatoes

    Place the cut potato sticks into a large bowl of cold water. Soak them for at least 30 minutes. This helps to remove excess starch and will result in crispier fries.

    Drying the Potatoes

    After soaking, drain the potatoes and pat them dry with a clean kitchen towel or paper towels. Removing moisture is crucial to achieving crispy fries.

    Heating the Oil

    In a deep fryer or a large heavy-bottomed pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the temperature is accurate.

    Frying the Potatoes

    Carefully add a handful of the dried potato sticks into the hot oil, making sure not to overcrowd the pot. Fry them for about 4-5 minutes or until they are golden brown and crispy.

    Draining and Seasoning

    Using a slotted spoon, remove the fries from the oil and transfer them to a plate lined with paper towels to drain excess oil. While they are still hot, sprinkle with salt, black pepper, garlic powder, and paprika to taste.
