Biscuits

Preheat and Prepare
Preheat your oven to 450°F (232°C). Line a baking sheet with parchment paper.

Mix Dry Ingredients
In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

Cut in Butter
Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.

Add Buttermilk
Pour in the buttermilk and stir gently with a spatula until just combined. Do not overmix.

Shape Biscuits
Turn the dough out onto a lightly floured surface. Pat it into a rectangle about 1-inch thick. Use a biscuit cutter to cut out biscuits and place them on the prepared baking sheet.

Bake the biscuits in the preheated oven for 12-15 minutes or until golden brown.
Sausage Gravy

Cook Sausage
In a large skillet over medium heat, crumble and cook the breakfast sausage until browned and fully cooked, about 5-7 minutes.

Make Roux
Sprinkle the flour over the cooked sausage and stir well to combine. Cook for 1-2 minutes to remove the raw flour taste.

Add Milk
Slowly pour in the milk while stirring continuously to prevent lumps. Bring the mixture to a simmer.

Season the gravy with salt and black pepper to taste. Let it simmer until thickened, about 5-7 minutes.

Make Roux
Sprinkle the flour over the mushrooms and stir to coat. Cook for 1-2 minutes.

Add Broth
Slowly add the vegetable broth while stirring to avoid lumps. Bring to a simmer.

Stir in soy sauce, and season with salt and black pepper to taste. Let it simmer until thickened, about 5-7 minutes.
