    Rehydrate Morels

    In a bowl, soak the dried morel mushrooms in warm water for about 20 minutes until they are rehydrated. Drain and chop them into smaller pieces, if desired.

    Cook Morels

    In a skillet, melt 1 tablespoon of butter over medium heat. Add the chopped morels and sauté for about 5 minutes until they are tender. Season with salt and pepper, then remove from heat and set aside.

    Prepare Eggs

    In a separate bowl, crack the hen's eggs and whisk them until well combined. Stir in the sautéed morels and chopped parsley.

    Cook Eggs

    In the same skillet, melt the remaining tablespoon of butter over medium-low heat. Pour in the egg mixture and gently cook, stirring occasionally, until the eggs are just set but still creamy, about 4-5 minutes.

    Add Truffles

    Finely shave the fresh truffles over the top of the scrambled eggs just before serving. Adjust seasoning with additional salt and pepper if needed.

    Serve

    Plate the scrambled eggs and garnish with a sprinkle of additional chopped parsley and truffle shavings. Enjoy warm.
