Method
Vanilla Parfait

Prepare the Gelatin
In a small bowl, sprinkle gelatin over water and let it bloom for 5 minutes.

Make the Custard
In a saucepan, whisk together egg yolks and sugar. Gradually add 1 cup of heavy cream. Cook over low heat, stirring until thickened. Remove from heat and stir in vanilla extract and bloomed gelatin until fully dissolved.

Whip the Cream
In a separate bowl, whip the remaining heavy cream to soft peaks. Fold the whipped cream into the custard mixture gently.

Chill
Pour the mixture into serving glasses and refrigerate for at least 4 hours, or until set.
Meringue

Preheat Oven
Preheat your oven to 200°F (93°C). Line a baking sheet with parchment paper.

Pipe Meringues
Transfer the meringue mixture into a piping bag and pipe small rounds onto the parchment paper.

Bake
Bake for 1.5 to 2 hours until meringues are dry and crisp. Turn off the oven and let them cool inside.
Raspberry Sorbet

Blend Ingredients
In a blender, combine fresh raspberries, sugar, and lemon juice. Blend until smooth.

Chill Mixture
Transfer the raspberry mixture to a bowl and refrigerate for at least 1 hour.

Churn Sorbet
Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency. Transfer to a container and freeze until firm.
Liquid Nitrogen Rose

Prepare Rose Petals
Gently wash and dry edible rose petals.

Freeze with Liquid Nitrogen
Using gloves, dip the rose petals into liquid nitrogen for a few seconds until frozen solid.
