Baba Au Rhum

Method

Preparation

  1. 1

    Make the Dough

In a small bowl, dissolve the yeast in warm milk and let it sit for about 5 minutes. In a large mixing bowl, combine flour, sugar, and salt. Add the yeast mixture, melted butter, eggs, and vanilla extract. Mix until a smooth dough forms.

  2. 2

    First Rise

Cover the dough with a cloth and let it rise in a warm place for about 1 hour or until it has doubled in size.

  3. 3

    Bake the Baba

Preheat the oven to 350°F (175°C). Grease a baba mold or small bundt pan. Pour the risen dough into the prepared mold and bake for 25-30 minutes until golden brown. Remove from the oven and let cool.

  4. 4

    Prepare the Rum Syrup

In a saucepan, combine water, sugar, and dark rum. Bring to a boil, then reduce heat and simmer for 10 minutes. Remove from heat and let cool slightly.

  5. 5

    Soak the Baba

Once the baba is cool, pour the rum syrup over it, allowing it to soak in completely.

  6. 6

    Make Chantilly

In a mixing bowl, whip the heavy cream with powdered sugar until soft peaks form.

  7. 7

    Serve

Slice the baba and serve with a dollop of vanilla chantilly on top.
