Preparing the Calamari

Clean and Cut Calamari
If not already done, clean the calamari by removing the innards and cartilage. Cut the body into rings about 1/2 inch thick.

Prepare the Breading
In a large bowl, mix the flour, cornstarch, salt, black pepper, garlic powder, and paprika.

Prepare the Wet Mixture
In another bowl, whisk together the eggs and buttermilk until well combined.

Dredge the Calamari
Dip the calamari rings into the wet mixture, then into the dry mixture, coating them evenly. Shake off any excess flour.
Frying the Calamari

In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Carefully add the breaded calamari rings in batches, making sure not to overcrowd the pot. Fry for 2-3 minutes or until golden brown and crispy.
