    Soak the noodles

    Place the dried rice noodles in a large bowl and pour warm (not boiling) water over them so they are fully submerged. Soak 20–30 minutes, stirring occasionally, until pliable but still slightly firm (al dente). Drain and toss with 1 teaspoon oil to keep from sticking. Set aside.

    Prep proteins and vegetables

    Thinly slice the chicken or pork across the grain into bite-sized strips. Beat the eggs lightly in a small bowl. Mince the garlic, thinly slice the shallot/onion, trim the bean sprouts, slice the scallions on a bias, and julienne the carrot if using.

Sauce

    In a small bowl, whisk together light soy sauce, dark soy sauce, oyster sauce, fish sauce, sugar, and pepper until sugar dissolves. Taste and adjust balance — sauce should be savory with a hint of sweetness and salt. Set aside.

Cooking

    Heat the wok

    Place a large wok or wide skillet over high heat. When very hot, add 2 tablespoons neutral oil and swirl to coat. The oil should shimmer but not smoke heavily.

    Cook the protein

    Add the sliced chicken or pork in a single layer and stir-fry quickly until just cooked through, about 2–3 minutes. Push the cooked meat to the side of the wok or remove to a plate to prevent overcooking.

    Scramble the eggs

    Add the remaining 1 tablespoon oil to the wok. Pour in the beaten eggs and let set briefly, then scramble until just set but still soft. Break into bite-sized pieces and combine with the meat in the wok (or set aside with meat).

    Aromatics and vegetables

    Add the minced garlic and sliced shallot/onion to the hot wok and stir-fry 20–30 seconds until fragrant (do not burn). Add julienned carrot and stir 30–45 seconds. Return meat and eggs to the wok if removed earlier.

    Add noodles and sauce

    Add the drained rice noodles to the wok. Pour the prepared sauce evenly over the noodles. Using tongs or two spatulas, toss and stir-fry on high heat to combine, 1–2 minutes. Be gentle to avoid tearing the noodles. If mixture seems dry, splash 1–2 tablespoons warm water to help steam and coat noodles.

    Finish with sprouts and scallions

    When noodles are heated through and evenly coated with sauce, add the bean sprouts and most of the sliced scallions. Toss briefly (30–45 seconds) — you want the sprouts to remain crisp-tender. Drizzle sesame oil if using and give a final toss. Taste and adjust seasoning with a pinch of salt or extra soy/fish sauce if needed.

Serve

    Transfer the fried rice noodles to a serving platter. Sprinkle remaining scallions and cilantro over the top. Serve immediately with lime wedges on the side for squeezing over individual portions.
