Prepare vegetables

    Wash and cut

    Rinse all vegetables under cold running water. Cut broccoli and cauliflower into evenly sized florets (about 1–1.5 inch pieces). Peel and slice the carrot on the bias into 1/4-inch pieces. Trim the ends of the snap peas and remove seeds or strings if present. Julienne the red bell pepper into thin strips. Pat vegetables dry with a clean towel or spin in a salad spinner.

    Aim for uniform piece sizes so they steam evenly—smaller items will finish faster than larger florets.

Steam vegetables

    Set up steamer

    Pour 1 cup of water into a medium saucepan or pot. Bring the water to a gentle boil over medium-high heat. Place a steamer basket or insert into the pot making sure the water level sits below the basket bottom (water should not touch vegetables).

    Add vegetables and steam

    Arrange vegetables in the basket in a single layer if possible, putting denser vegetables (carrots, cauliflower) closest to the steam source and quicker-cooking items (snap peas, bell pepper, broccoli) on top. Cover the pot with a tight-fitting lid to trap steam.

    Steam in stages: steam for 4 minutes, then quickly check tenderness with a paring knife or fork. Continue steaming another 2–4 minutes as needed. Total steaming time should be about 6–8 minutes for crisp-tender vegetables. If you prefer softer vegetables, steam 9–10 minutes. Avoid over-steaming to preserve color and texture.

    Shock (optional)

    If you want to preserve bright color and stop the cooking immediately, prepare a bowl of ice water. When vegetables reach desired doneness, transfer them with tongs to the ice water for 30–60 seconds, then drain and pat dry. If not shocking, transfer directly to a serving bowl.

Season and serve

    Finish with fat and acid

    While vegetables are still warm, add 2 tablespoons unsalted butter (or olive oil) and 1 tablespoon fresh lemon juice. Toss gently to coat so butter melts and lemon distributes evenly.

    Season with 1 teaspoon coarse salt and 1 teaspoon freshly ground black pepper, then taste and adjust seasoning as needed.

    Sprinkle optional chopped fresh parsley (2 tablespoons) and toasted sesame seeds (1 teaspoon) over the vegetables for garnish and texture.
