Method
Sauce Base
- 1
In a small bowl or measuring cup, combine 1 cup pineapple juice, 1 tablespoon rice vinegar, 1/2 cup ketchup, 1/4 cup packed brown sugar, 1 tablespoon soy sauce, and 1/4 cup water. Whisk until the sugar and ketchup are fully integrated and the mixture is uniform.
- 2
Taste the mixture quickly: it should be noticeably sweet with a bright tang and a hint of umami. Adjust balance now if needed — add up to 1 teaspoon more rice vinegar for tang or up to 1 tablespoon more brown sugar for sweetness, but small increments only.
Aromatics & Seasoning
- 3
Mince 1 clove garlic and finely grate 1 teaspoon fresh ginger. In a small saucepan, heat the sesame oil over medium-low heat until fragrant (about 20–30 seconds). Add the minced garlic and grated ginger and cook, stirring constantly, for 30–45 seconds until aromatic but not browned.
- 4
Carefully pour the prepared sauce base into the saucepan with the aromatics. Stir to combine and bring the mixture to a gentle simmer over medium heat.
- 5
Add 1/4 teaspoon red pepper flakes if using, plus 1/4 teaspoon salt and 1/8 teaspoon black pepper. Stir and simmer for 2 minutes to allow flavors to meld.
Thickening & Finishing
- 6
Make the Slurry
In a small bowl, whisk 2 teaspoons cornstarch into 2 tablespoons cold water until completely smooth and free of lumps.
- 7
Thicken the Sauce
With the sauce simmering, slowly pour the cornstarch slurry into the saucepan while whisking constantly. Continue to simmer for 1–2 minutes until the sauce thickens and becomes glossy. If the sauce becomes too thick, whisk in up to 1–2 tablespoons of water to reach desired consistency.
- 8
Final Taste and Cool
Turn off the heat and stir in 1/2 teaspoon sesame oil for aroma. Taste and adjust seasoning: add a pinch more salt, a few drops of rice vinegar for brightness, or a touch more sugar for sweetness. Let the sauce cool slightly — it will thicken a bit more as it cools.
