Marinated Chicken

    Prep and Marinate

    Pat the chicken thighs dry with paper towels. In a bowl, combine minced garlic, light soy sauce, oyster sauce, fish sauce, sesame oil, white pepper, and sugar. Rub the marinade all over the chicken, including under the skin where possible. Cover and refrigerate for at least 1 hour, preferably 3–4 hours or overnight for deeper flavor.

    About 20–30 minutes before frying, remove chicken from the refrigerator to bring closer to room temperature. In a large shallow dish, whisk together all-purpose flour, rice flour (or cornstarch), baking powder, kosher salt, white pepper, and garlic powder. If using the wet binder: in a separate bowl beat the egg and ice-cold water together to make a thin batter.

    If you want an extra-crisp double layer: first dredge a marinated thigh lightly in the dry flour mixture, then dip into the wet binder, shake off excess, and finish with a final dredge in the dry mixture so an even coating forms. For a simpler coating, simply dredge the marinated chicken in the dry mixture until evenly coated, pressing the flour mix into the skin and any crevices.

    Pour oil into a deep-sided heavy pot or deep fryer to a depth of about 3–4 inches (enough to mostly submerge the thighs). Heat oil to 170–175°C (340–350°F). Use a thermometer for accuracy.

    Fry the chicken in batches to avoid overcrowding. For bone-in thighs: gently lower pieces into the hot oil skin-side down. Fry for 6–8 minutes, then carefully flip and continue frying another 6–8 minutes, until golden brown and an instant-read thermometer inserted near the bone reaches 75°C (165°F). Total time may be 12–16 minutes depending on size.

    If the coating browns too quickly before the interior is cooked, reduce heat slightly and cover partially for a few minutes (vented) or finish in a 180°C (350°F) oven for 6–8 minutes. Drain fried chicken on a wire rack set over a sheet pan to keep crisp (not directly on paper towels, which can steam the crust).

Khao Mun Gai-style Dipping Sauce

    While the chicken fries, combine the soy sauce, dark soy sauce, black or rice vinegar, grated ginger, minced garlic, chicken stock (or water), sugar, and chopped chiles in a small bowl. Stir until the sugar dissolves. Taste and adjust: more vinegar for tang, more sugar for balance, or more chiles for heat. Keep at room temperature until serving.

Garnish & Serving

    Serve each portion with steamed jasmine rice and a couple of cucumber slices on the side, garnish with cilantro and a lime wedge. Spoon some of the dipping sauce over rice if you like the classic Khao Mun Gai flavor profile, or serve it on the side for dipping the fried chicken. Enjoy immediately while the chicken is hot and crisp.
