Prepare bananas
Peel the ripe bananas and cut them into 1/2-inch thick diagonal slices (or lengthwise into quarters for larger pieces). Try to keep pieces similar in size so they cook evenly.

Make batter
In a medium bowl, whisk together the all-purpose flour, granulated sugar, baking powder, cinnamon (if using), and a pinch of salt. In a separate small bowl, whisk the egg, milk and vanilla extract until combined. Pour the wet ingredients into the dry and stir gently until just combined; the batter should be thick enough to coat the bananas. If batter is too stiff, add 1 teaspoon of milk at a time until spoonable but not runny.

Heat oil
Pour the oil into a deep skillet or heavy-bottomed pot to a depth of about 1 to 1 1/2 inches (enough to half-submerge the banana pieces). Heat over medium-high until oil reaches 350°F (175°C) or a small drop of batter sizzles and rises immediately when tested. Maintain temperature around 325–350°F during frying; adjust heat as needed.

Fry bananas
Carefully add battered banana pieces in a single layer without overcrowding—work in batches of 6–8 depending on pan size. Fry until golden brown and crisp, about 2–3 minutes per side, turning once with tongs or a slotted spoon. If pieces are thicker, fry slightly longer. Remove to a paper towel–lined tray to drain.
