Check and set temperature
Ensure the bottle of Pinot Noir is at serving temperature (approx. 55-60°F / 13-16°C). If the bottle was stored cooler, allow it to warm for 15–30 minutes out of refrigeration; if too warm, chill briefly (10–15 minutes) in an ice bucket with water and ice to reach target temperature.

Inspect the bottle
Check the label and vintage to confirm the wine and to determine if decanting is recommended (young, tannic, or sediment-prone wines benefit from decanting). If there is visible sediment or the wine is particularly young and tight, plan to decant.

Polish glassware
Using a clean linen or microfibre cloth, polish the inside and outside of a Burgundy-style wine glass just before serving to remove any dust or streaks. Hold the glass by the stem to avoid warming the bowl.

Open and decant if needed
Carefully open the bottle using a waiter’s corkscrew. If decanting: pour a small amount into a decanter first to check for sediment, then slowly pour the remainder into the decanter, watching for sediment and stopping when it reaches the neck. Let the decanted wine breathe for 10–30 minutes depending on how youthful or closed it is. If no decanting is needed, simply pour directly into the glass.

Presentation
Place the poured glass on a coaster or serving tray. Offer a small water carafe (about 60 ml) alongside for palate cleansing if desired. Present the bottle label to the guest if appropriate, and briefly describe the wine (region, vintage, tasting notes) if serving tableside.

Suggested tasting steps
Encourage the guest to swirl the wine gently to release aromas, inhale to note bouquet (red fruits, earth, spice), sip to assess acidity, tannin and finish. If the wine was decanted, note how aeration may change aromas and soften tannins over 15–30 minutes.

Storage of opened bottle
If the bottle is not finished, re-cork it (preferably with the original cork or a wine stopper) and store upright in a cool place or chilled to preserve freshness for 2–4 days depending on the wine’s age and structure.
