Chill wine
If the bottle of Ancient Peaks Merlot has been stored at cellar temperature, place the bottle in the refrigerator for 20–30 minutes before serving to bring it to an ideal drinking temperature (55–60°F / 13–16°C). If the bottle is already at refrigerator temperature, remove it 10–15 minutes before serving so it’s not overly cold.

Select and prepare glassware
Choose a clean, dry Bordeaux-style red wine glass. Warm the glass slightly by cupping it in your hands for a few seconds to avoid shocking the wine if it’s on the cool side, but don’t heat it. Ensure there are no residual dish soap or strong odors on the glass.

Open and pour
Carefully open the bottle using a waiter’s corkscrew or appropriate opener. Wipe the bottle lip with a clean napkin. Pour approximately 5–6 ounces (1 glass) of Ancient Peaks Merlot into the center of the bowl so the wine can breathe and swirl easily. Fill the glass to approximately one-third full to allow room for aroma development.

Taste
Take a modest sip, moving the wine across your palate. Notice acidity, tannin structure, fruit concentration, and finish. Allow a moment to register flavors (black cherry, dark fruit, mocha) and the mouthfeel (medium body, smooth tannins).

Serve with optional palate water
If serving multiple wines or offering a tasting, provide a small glass of still water (approximately 4 oz) on the side for palate cleansing between sips or flights.

Storage after opening
If the bottle isn’t finished, re-cork it or use a wine stopper and refrigerate. Use within 2–4 days for best freshness; bring back to serving temperature before pouring additional glasses.
