Spring Roll Filling

    Prepare vegetables: finely shred the cabbage, finely chop the mushrooms, grate or julienne the carrot, thinly slice the bamboo shoots and green onion, and mince the garlic and ginger.

    Heat a wok or large nonstick skillet over medium-high heat. Add 2 tablespoons vegetable oil and swirl to coat.

    Add minced garlic and ginger to the hot oil and stir-fry 10–15 seconds until fragrant (do not brown).

    Add mushrooms and stir-fry 1–2 minutes until softened and any released liquid mostly evaporates.

    Add shredded cabbage, grated carrot and bamboo shoots. Stir-fry 2–3 minutes until cabbage wilts but still has slight bite. Keep stirring to avoid burning.

    Season the mixture with 1 tablespoon soy sauce, 1/2 teaspoon sesame oil, 1/2 teaspoon Chinese five spice, 1/4 teaspoon white pepper and 1/4 teaspoon salt. Toss to combine and cook another 30–45 seconds.

    Add sliced green onion and chopped cilantro (if using). Stir to combine and remove pan from heat. Spread filling on a tray or plate to cool to near room temperature (about 10–15 minutes). Excess liquid will make wrappers soggy; if filling seems wet, cook a bit longer to evaporate moisture.

Wrappers & Assembly

    Prepare cornstarch slurry by whisking 1 tablespoon cornstarch with 2 tablespoons water until smooth. This will be the adhesive to seal the rolls.

    Place one spring roll wrapper on a clean work surface with a corner pointing toward you (diamond orientation) if using square or the edge toward you if round.

    Spoon about 3 heaping tablespoons (roughly 1/4 cup) of cooled filling onto the lower third of the wrapper, keeping filling centered and leaving a 1/2-inch border at the sides.

    Fold the bottom corner up over the filling, tuck tightly, then fold the two side corners toward the center snugly over the filling. Roll the wrapper away from you until about 1 inch from the top edge, brush the top edge lightly with cornstarch slurry, and finish rolling to seal. Repeat with remaining wrappers and filling (this recipe yields about 4–8 small rolls depending on wrapper size; scale to make two rolls as plated by using more filling per roll).

    Place assembled rolls seam-side down on a tray and chill 10 minutes to set the seal (optional but helps prevent unrolling while frying).

Frying

    Heat oil in a deep skillet or pot to 350°F (175°C). If you don't have a thermometer, test by dropping a small bit of wrapper into the oil — it should sizzle and float immediately without browning instantly.

    Fry spring rolls in batches, seam side down first, for 2.5–3.5 minutes turning occasionally so they brown evenly to a deep golden crisp. For smaller rolls reduce time slightly. Avoid overcrowding the pan.

    Use a slotted spoon to transfer fried rolls to a paper towel–lined plate to drain. Keep warm in a low oven (about 200°F / 95°C) if needed while frying remaining batches.

    Let rest 1–2 minutes (they will be very hot inside), then slice on a bias if desired and serve immediately with dipping sauce.

Dipping Sauce (optional)

    Whisk together 2 tablespoons hoisin, 1 teaspoon rice vinegar and 1/2 teaspoon sriracha (if using). Sprinkle with toasted sesame seeds. Adjust sweet/sour/spice to taste.
