    Marinate shrimp

    Place the peeled, deveined shrimp in a bowl. Add 2 tbs soy sauce, 1 tbs lemon juice, 2 tsp minced garlic, 1 tsp cornstarch and 1 tsp black pepper. Toss to coat evenly. Let marinate 10–15 minutes while you prepare vegetables and sauce.

    Prep and par-cook vegetables

    Bring a medium pot of salted water to a boil. Blanch the broccoli and carrots for 1 minute, then immediately transfer to an ice bath to stop cooking. Drain well. Keep bell pepper, snow peas and green onions raw — they will be stir-fried briefly to retain crunch.

Sauce

    Make the sauce

    In a small bowl whisk together 1 cup broth, 1 tbs oyster sauce, 1 tbs soy sauce, 1 tsp rice vinegar, 1 tsp sesame oil and 1 tsp brown sugar. In a separate small cup dissolve 1 tsp cornstarch in 1 tbs cold water, then add to the sauce and whisk smooth. Set aside.

Cooking & Finish

    Stir-fry shrimp

    Heat a large skillet or wok over medium-high heat until very hot. Add 1 tbs neutral oil. Add the marinated shrimp in a single layer (work in two batches if necessary) and stir-fry 1–2 minutes per side until pink and just cooked through. Remove shrimp to a plate and keep warm.

    Cook vegetables

    Add the remaining 1 tbs oil to the hot pan. Add red bell pepper and carrots and stir-fry 1–2 minutes. Add blanched broccoli and snow peas and continue stir-frying another 1–2 minutes until vegetables are crisp-tender.

    Combine and finish

    Return the cooked shrimp to the pan along with the green onions. Pour the prepared sauce over the shrimp and vegetables. Stir constantly and cook 1–2 minutes until sauce thickens and glazes the ingredients. Taste and adjust seasoning with 1/2 tsp salt and 1/4 tsp freshly ground black pepper, or more to taste.

    Serve

    Turn off the heat. Transfer to a serving platter or bowls. Sprinkle with toasted sesame seeds if using. Serve immediately over steamed rice or noodles.
