Prepare alginate-pomegranate mixture
In a tall measuring cup or bowl, combine 1 cup pomegranate juice with 1.5 tsp sodium alginate. Use an immersion blender or whisk vigorously until the alginate is fully hydrated and the mixture is uniform. Let rest for 15–30 minutes to remove bubbles and fully hydrate the alginate.
Make calcium bath
Dissolve 2 tsp calcium chloride into 4 cups cold water in a medium bowl. Stir until completely dissolved; this is your setting bath for the spheres. Keep the bath at room temperature.
Form the spheres
Fill a squeeze bottle, spoon, or syringe with the alginate-pomegranate mixture. Hold the bottle about 1–2 inches above the surface of the calcium bath and gently squeeze small droplets (approx 6–8 mm in diameter) into the bath. Work in small batches to avoid overcrowding. The droplets will form gelled spheres on contact.
Set and rinse
Let the spheres sit in the calcium bath for 1–2 minutes for a delicate membrane (longer up to 3 minutes for firmer skins). Using a slotted spoon or mesh strainer, remove the spheres and transfer them to a bowl of 1 cup cold water to rinse off excess calcium. Swirl gently for 30 seconds, then drain. Store the spheres in a small amount of pomegranate juice in the refrigerator if not using immediately (use within 4 days; best same day).

Make pomegranate syrup
In a small saucepan combine 1 cup pomegranate juice and 1/2 cup granulated sugar. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves. Let simmer 3–4 minutes to slightly reduce and thicken. Remove from heat and stir in 1 tablespoon fresh lemon juice. Taste and add honey or simple syrup (about 1–2 tbsp) if you prefer sweeter. Cool to room temperature or chill.
Prepare tea base
Brew 2 cups of strong black or green tea and let cool to room temperature (or use ready-cooled tea). If you used brewed tea, strain and chill. Combine the cooled tea with the pomegranate syrup in a container and stir to blend. Adjust sweetness to taste.
Assembly
Divide ice cubes among 4 serving glasses or bubble tea cups (about 1/4 cup ice per serving). Spoon or place 12–18 pomegranate popping boba spheres into each glass (adjust amount to preference).
Pour the pomegranate-tea mixture over the ice and boba, filling each glass (approximately 1/2 cup tea–pomegranate mixture per serving if making 4 servings). Stir gently to combine.
Garnish each glass with a sprinkle of fresh pomegranate arils (about 1/2 tablespoon each) and 1–2 mint leaves. Serve immediately with a wide straw so the popping boba can be enjoyed.
