Tapioca Pearls (Boba)
Boil water
Bring 4 cups of water to a rolling boil in a medium saucepan over high heat.
Cook pearls
Add 1/2 cup dry tapioca pearls to the boiling water while stirring so they don't stick. Reduce heat slightly to maintain a vigorous simmer and cook uncovered for 8–12 minutes, stirring occasionally, until pearls are translucent with a slightly chewy center. Cooking time varies by brand; check package instructions and taste for desired chew.
Rest pearls
Turn off the heat and cover the pan. Let the pearls rest in the hot water for 8–10 minutes to finish cooking and become fully translucent.
Rinse and sweeten
Drain the pearls into a fine mesh sieve and rinse quickly under cold running water to stop cooking and remove excess starch. Transfer pearls into a small bowl. In a separate small saucepan combine 1/4 cup brown or cane sugar with 1/4 cup water and warm gently until sugar dissolves to make a simple syrup. Pour the warm syrup over the drained pearls, stir to coat, and let them sit at room temperature until ready to assemble (at least 5 minutes).

Place 1 cup of store-bought mango popping boba in a small bowl and keep chilled. Do not heat or cook these; they are juice-filled spheres best served cold. If the boba are packed in syrup, lightly drain before using so they don't dilute the drink excessively.
Mango Puree & Drink Base
Prepare mango puree
Peel and cube ripe mango flesh (or use frozen thawed mango). Place about 1 cup mango cubes in a blender with 1 tablespoon sugar (or simple syrup) and 1 teaspoon fresh lime juice. Add 1–2 tablespoons hot water if needed to help the blender along. Blend until very smooth.
Adjust sweetness and texture
Taste the puree and adjust sweetness with more sugar if needed. For a thinner drink base, add cold water or coconut water up to 1 cup and pulse briefly to combine, leaving some body. Chill the puree if it warmed during blending.
Assemble drink
Divide the sweetened tapioca pearls between two serving glasses (about 1/4 cup cooked pearls per glass). Add 1/2 cup mango popping boba to each glass (or distribute evenly depending on how many glasses you serve). Fill each glass with ice cubes (about 1/2 cup per glass). Pour the mango puree and cold water mixture over the ice, dividing evenly between the two glasses (about 3/4 cup–1 cup per glass depending on desired dilution). Stir gently once to combine without popping too many juice spheres.
Finish and serve
Top each glass with a few mango slices and mint leaves for garnish. Serve immediately with a wide straw so both tapioca pearls and popping boba can be enjoyed.
