Bloom gelatin
Pour 1 cup cold water into a large heatproof bowl. Sprinkle the 6 tablespoons of unflavored gelatin evenly over the surface and let sit 5 minutes to bloom (the gelatin will absorb the water and swell).
After blooming, pour 4 cups of hot (just-off-boil) water over the bloomed gelatin, stirring briskly until fully dissolved, about 1–2 minutes. Add the 3 cups granulated sugar and stir until dissolved.
Optional: Stir in 2 tablespoons lemon juice to brighten the overall flavor. Let the mixture cool slightly (about 5–10 minutes) so it is warm but not piping hot before preparing colored layers.
Colored Layers
Prepare six small bowls or measuring cups for the colored layers. Divide the sweetened gelatin base evenly into six portions (about 1 cup each). If your total base volume is a little more or less, measure roughly equal portions so layers are even.
Color and flavor each portion
To each portion, add 1 cup of the chosen clear fruit juice or flavored drink (red, orange, yellow, green, blue, purple). Stir each portion until uniformly mixed. If the juices are strongly flavored or opaque, taste and adjust: you can reduce sugar slightly in the base next time. If you want brighter color without extra sugar, use a few drops of food coloring matching each color.
Work quickly but carefully: pour the first (bottom) color—typically red—into a prepared 9x13-inch pan, individual molds, or a large clear trifle bowl. Pour about 1 cup so the layer is even (adjust to your container size). Chill the pan in the refrigerator until the layer is set but still slightly tacky to the touch, about 20–30 minutes (checking after 15 minutes depending on fridge).
Once the first layer is set, gently pour the next color (orange) over the back of a spoon held just above the surface to avoid disturbing the set layer. Chill again until set, about 20–30 minutes. Repeat this process for yellow, green, blue, and finally purple, chilling between each layer until set. Total chilling per layer may vary; aim for each layer to be firm enough to support the next—about 20–45 minutes per layer depending on thickness and refrigerator temperature.
Tip: If layers are taking too long to set, refrigerate on a level surface and reduce portion thickness. If a layer sets too firmly and the next layer does not adhere well, lightly brush a few teaspoons of the warm (not hot) uncolored gelatin base along the set surface before pouring the next layer.
Finishing & Serving
After all layers are poured and fully set (allow at least 2–3 hours total, or refrigerate overnight for best results), remove the pan from the refrigerator. If using individual molds, dip the bottom briefly (2–3 seconds) into warm water to loosen and invert onto a serving plate. For a pan, cut into squares or use a hot knife dipped in warm water for clean slices.
Serve chilled, topped with whipped cream and fresh berries or mint if desired. Store any leftovers covered in the refrigerator for up to 5 days.
