Heat water and steep tea
Bring 4 cups water to just below boiling (about 175–185°F / 80–85°C). If you don't have a thermometer, remove from boil and wait 1–2 minutes. Add 2 teaspoons loose green tea (or 4 tea bags). Steep for 2–3 minutes for a bright, slightly grassy flavor; avoid oversteeping to prevent bitterness.

Sweeten and cool
Remove tea leaves or tea bags. Stir in 2 tablespoons honey or simple syrup while the tea is still warm so it dissolves. Add 1 tablespoon fresh lemon juice and stir. Transfer tea to the refrigerator or an ice bath to chill quickly until cold (about 20–30 minutes) or let cool to room temperature if you plan to serve later.

Combine and simmer
In a small saucepan combine 1 cup water, 3 tablespoons granulated sugar, and 3 ounces passion fruit pulp. Stir to combine and bring to a gentle simmer over medium heat. Reduce heat and simmer 4–6 minutes, stirring occasionally, until sugar dissolves and mixture slightly thickens into a syrup.

Strain (optional)
If you prefer a smoother syrup without seeds, pour the hot mixture through a fine-mesh strainer into a bowl, pressing on solids with the back of a spoon to extract flavor. Discard seeds/solids. Let the syrup cool to room temperature, then refrigerate until chilled (about 15–20 minutes).

Assemble the drink
Fill two tall glasses with 1 cup ice each. Divide the chilled green tea between the glasses (about 1.5 cups per glass). Add 1.5 tablespoons passion fruit syrup to each glass (adjust to taste for sweetness/intensity). Stir gently to combine so the passion fruit flavor distributes through the tea.

Garnish and serve
Top each glass with 3 fresh mint leaves. If using, float a half passion fruit (scoop some pulp over the drink) or place the half on the rim as garnish. Serve immediately with a straw or stirrer. Offer additional syrup on the side for guests who want it sweeter.
