Method
Boba (Crystal Tapioca Pearls)
- 1
Boil water
Bring 6 cups of water to a rolling boil in a medium saucepan over high heat.
- 2
Cook pearls
Add 1 cup crystal tapioca pearls to the boiling water and stir gently to prevent sticking. When the pearls float, reduce heat to medium and simmer, stirring occasionally, for 8–12 minutes until translucent and tender (follow package timing if it differs; agar-based pearls often cook faster).
- 3
Rest
Turn off heat, cover the pot, and let the pearls sit in the hot water for an additional 8 minutes to finish softening.
- 4
Rinse and cool
Drain the pearls in a sieve and rinse thoroughly under cold running water to stop cooking and remove excess starch. Transfer pearls to a small bowl.
- 5
Make boba syrup & marinate
In a separate small bowl, dissolve 1 tbsp granulated sugar and 2 tbsp brown sugar in 2 tbsp hot water, stirring until combined into a syrup. Add the drained pearls to the syrup and stir to coat. Let sit at least 5 minutes so pearls absorb some sweetness. Keep warm or chilled depending on serving temperature.
Matcha Base
- 6
Whisk matcha
Sift 1 tsp matcha powder into a small bowl to remove lumps. Add 2 tbsp hot water (about 175°F / 80°C). Whisk quickly in a zigzag (M) motion until smooth, frothy, and fully dissolved with no clumps, about 20–30 seconds.
- 7
Assemble drink
Put the syrup-coated crystal boba into a serving glass (about 3/4 cup pearls and syrup, or adjust). Add 1 cup ice cubes on top of the pearls. Pour 1 cup milk over the ice and pearls. Stir in 1 tbsp sweetened condensed milk (optional) and 1 tsp vanilla/simple syrup (optional) to sweeten. Pour the whisked matcha over the milk; gently stir once or twice if you want a pale green uniform drink, or leave layered for visual effect.

- 9
Finish
Dust the top lightly with 1/4 tsp matcha powder for aroma and presentation. Insert a wide straw so the pearls can be sipped. Serve immediately while pearls are at their best texture.

Storage note: Crystal boba is best eaten within 2–4 hours; refrigerate pearls in their syrup for up to 24 hours but note texture will firm.
