Honeydew Syrup

    Prepare the melon

    Peel the honeydew, remove seeds, and cut into chunks. You should have about 3 cups of diced melon from a medium fruit.

    Place the diced honeydew in a blender and puree until smooth (about 30–60 seconds). If mixture is very watery, strain through a fine mesh sieve to remove excess pulp for a smoother syrup; otherwise keep pulp for texture.

    Cook into syrup

    In a small saucepan, combine 1 cup honeydew puree, 1 cup granulated sugar, and 1/2 cup water. Stir over medium heat until the sugar dissolves, then bring to a gentle simmer for 5–7 minutes until slightly thickened. Remove from heat and let cool completely. If you prefer a thinner flavoring, add up to 1/2 cup extra water.

    Strain and store

    For a clear syrup, strain the cooled mixture through a fine sieve or cheesecloth into a clean jar. Refrigerate — syrup will keep 5–7 days.

Tea Base

    Bring 2 cups water to a near-boil. Add 2 tablespoons loose black tea (or 2 tea bags). Steep 4–5 minutes for strong flavor (5–7 minutes if you like very robust tea). Remove tea leaves or bags and let the brewed tea cool to room temperature. Optionally chill in fridge for 15–20 minutes. If making tapioca pearls, cook them now according to package instructions so they finish around assembly time.

Milk Tea Assembly

    Prepare glasses: divide 1 cup cooked tapioca pearls (if using) between two tall glasses, or skip for a smooth drink.

    Add ice: fill each glass about halfway with ice cubes (about 1 cup ice per glass).

    Combine tea and milk: in a measuring cup or pitcher, mix 1 cup cooled strong black tea with 1 cup milk (per two servings this is 2 cups total; for each serving use a 1:1 ratio of 1/2 cup tea + 1/2 cup milk). Stir to combine.

    Sweeten with honeydew syrup: add 3 tablespoons honeydew syrup to the tea + milk mixture (adjust 1–2 tablespoons more per serving if you prefer sweeter). Taste and add optional simple syrup or honey to adjust sweetness.

    Assemble drinks: pour the milk-tea-honeydew mixture over the ice and pearls in each glass, distributing evenly.
