Prepare Filling

Chop & Soften
Finely chop the imitation or real crab meat into small pieces so it distributes evenly. Let the cream cheese sit at room temperature for 20–30 minutes until softened for easy mixing.

In a medium mixing bowl, combine chopped crab, softened cream cheese, sliced green onions, soy sauce, sesame oil, sugar, minced garlic, white pepper, and chopped cilantro (if using). Mix thoroughly until smooth and well blended. Taste and adjust seasoning—add a little more soy sauce or pepper if desired.

Transfer the filling to a piping bag or bowl. If using a bowl, place a damp cloth over it to prevent drying while you assemble wrappers.
Assemble Rangoon

Set up an assembly station with wonton wrappers, the filling, a small bowl of egg wash (beat the egg with 1 teaspoon water), and a small cup of plain water for sealing.

Place one wonton wrapper on a clean surface with a corner pointing toward you (diamond orientation). Spoon or pipe about 1 teaspoon (heaping) of the crab filling into the center of the wrapper. Do not overfill—too much filling will cause leaks.

Dip your finger in the plain water and lightly moisten the four edges of the wrapper. Fold the bottom corner up to meet the top corner to form a triangle, pressing the edges to seal and remove air. Optionally, bring the two side corners together and overlap slightly, sealing with a dab of egg wash to create the classic purse shape. Repeat with remaining wrappers and filling.

Fry Rangoon

Pour oil into a deep, heavy-bottomed pot or deep fryer to a depth of about 2–3 inches (roughly 3–4 cups depending on your pot). Heat oil to 350°F (175°C). If you don't have a thermometer, test with a small corner of wonton—it should sizzle and turn golden within ~20–30 seconds.

Fry 4–6 rangoons at a time without overcrowding, for 1.5–3 minutes, turning once, until they are puffed and golden brown. Use a slotted spoon or spider to remove them and drain on a wire rack or paper towels.

If desired, keep rangoon warm in a single layer on a baking sheet in a 200°F (95°C) oven while frying the remaining batches.
Serve

Arrange the hot Crab Rangoon on a platter and serve immediately with sweet chili sauce or your preferred dipping sauce. Leftovers can be reheated in a 350°F (175°C) oven for 8–10 minutes to crisp.
