Cook tapioca pearls
Bring 6 cups of water to a rolling boil in a medium pot. Add 3/4 cup uncooked black tapioca pearls and stir once to prevent sticking. When the pearls float, reduce heat to medium and simmer uncovered, following the package time for chewy texture (typically 20–30 minutes for large black pearls). Stir occasionally to prevent clumping. After simmering, remove from heat, cover with a lid, and let the pearls sit in the hot water for 10–15 minutes to finish cooking and soften.

Rinse and drain
Drain the pearls into a colander and rinse quickly under warm running water to remove excess starch. Transfer the drained pearls into a bowl.

Make brown sugar syrup
In a small saucepan, combine 1/2 cup dark brown sugar (or black sugar), 2 tablespoons light brown sugar and 1/4 cup water. Bring to a low boil over medium heat, stirring until the sugar dissolves. Continue simmering gently for 2–3 minutes until the syrup thickens slightly and darkens in color. Remove from heat.

Marinate pearls in syrup
Pour about half of the hot brown sugar syrup over the cooked, warm tapioca pearls and stir to coat. Let the pearls sit in the syrup at least 10 minutes so they absorb sweetness and develop the characteristic glossy, dark coating. Reserve the remaining syrup to drizzle inside serving glasses and for adjusting sweetness when serving.

Brew strong black tea
Bring 2 cups of water to a near boil. Add 2 teaspoons of strong black tea leaves (or 2 black tea bags). Steep for 4–6 minutes for robust flavor (4 minutes for medium strength, up to 6 for very strong). Remove tea leaves or bags and gently squeeze the bags against the side of the pot to extract flavor. Allow the brewed tea to cool slightly (about 3–5 minutes).

Assemble milk tea
Divide the syrup-coated boba between two serving glasses (about 1/4–1/3 cup boba per glass). If desired, drizzle some reserved brown sugar syrup on the inside walls of each glass to create the signature 'tiger stripe' look. Fill each glass with ice about halfway. Pour the slightly cooled brewed black tea into each glass until about 3/4 full, leaving room for milk. Gently pour the milk-sweetened mixture over the back of a spoon or down the side of the glass so it layers nicely over the tea.

Stir gently before drinking so syrup and milk combine with tea and boba. Add extra brown sugar syrup to taste and an optional pinch of flaky sea salt on top to enhance sweetness. Serve with a wide straw and enjoy immediately while the boba is soft and warm.
