Method

Rice

    Rinse the rice under cold water until the water runs clear; drain well.

    Combine the rinsed rice with 2 1/4 cups water in a rice cooker or saucepan; bring to a boil, then reduce heat to low and simmer until the rice is tender and the water is absorbed. Let stand 5 minutes before fluffing with a fork.

Beef and Sauce

    In a small bowl, whisk together soy sauce (3 tbsp), mirin (3 tbsp), sake (1 tbsp, optional), sugar (1 tbsp), and dashi stock (60 ml) until the sugar dissolves.

    Heat 1 tsp cooking oil in a skillet over medium-high heat. Add onion; sauté until translucent, about 3-5 minutes.

    Increase heat to high; add beef and sear briefly until browned, about 1-2 minutes.

    Pour the soy-mirin-sake mixture over the beef and onions. Simmer until the sauce thickens slightly and coats the beef, about 2-3 minutes.

Assemble and Serve
