Prep the Wings
Pat the chicken wings dry with paper towels. In a large bowl, toss the wings with olive oil, salt, black pepper, garlic powder, and smoked paprika until well coated.

Preheat the Smoker
Preheat your smoker to a temperature of 225°F (107°C) using your choice of wood chips for smoking.

Smoke the Wings
Place the seasoned wings on the smoker grates. Smoke the wings for about 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C) and the wings are tender.

Toss in Sauce
Remove the wings from the smoker and place them in a large bowl. Toss them with your choice of sauce until evenly coated.
