    Prepare the Chicken

    Start by trimming any excess fat from the boneless chicken breast.

    Marinate the Chicken

    In a small bowl, combine olive oil, minced garlic, chopped fresh rosemary, salt, black pepper, and lemon juice. Mix well to create a marinade.

    Coat the Chicken

    Place the chicken breast in a shallow dish and pour the marinade over it. Ensure that the chicken is well coated. Cover and refrigerate for at least 30 minutes.

    Prepare the Vegetables

    While the chicken is marinating, wash and chop the mixed vegetables into bite-sized pieces.

    Cook the Chicken

    Preheat a grill pan or skillet over medium-high heat. Once hot, add the marinated chicken breast and cook for about 5-7 minutes on each side, or until fully cooked and juices run clear.
