Preparation and Smoking

    Prepare the Olives

    In a large bowl, combine the Spanish olives with the minced garlic, fennel pollen, chili flakes, and citrus zest. Mix well to ensure the olives are evenly coated.

    Drizzle the olive oil over the olive mixture. Sprinkle with salt and toss again to combine. Cover the bowl with plastic wrap and let it marinate for at least 30 minutes at room temperature to allow the flavors to meld.

    Prepare the Smoker

    While the olives are marinating, prepare your smoker or grill for indirect smoking. Use wood chips like hickory or mesquite for a robust flavor. Preheat the smoker to 225°F (107°C).

    Smoke the Olives

    Once the smoker is ready, place the marinated olives in a smoking tray or a piece of aluminum foil, creating a small pouch. Smoke the olives for about 30-40 minutes, stirring occasionally, until they are infused with the smoky flavor.

    Remove the olives from the smoker and let them cool slightly. Transfer to a serving dish and garnish with chopped parsley. Serve warm or at room temperature as an appetizer.
