Gnocchi Preparation

    Cook the Potatoes

    Wash the potatoes thoroughly and place them in a large pot. Fill the pot with enough water to cover the potatoes. Bring the water to a boil over medium-high heat. Once boiling, reduce the heat and simmer until the potatoes are tender, about 20-25 minutes.

    Make the Dough

    Once the potatoes are cooked, drain them and let them cool slightly. Peel the potatoes while they are still warm and mash them in a large mixing bowl until smooth. Add the goat cheese, egg, and salt to the mashed potatoes and mix well. Gradually add the flour, 1/2 cup at a time, until a soft dough forms.

    Shape the Gnocchi

    Dust a clean surface with flour. Divide the dough into 4 equal pieces. Roll each piece into a long rope, about 1/2 inch in diameter. Cut the ropes into 1-inch pieces. Use a fork to press down gently on each piece to create ridges, which will help hold the sauce.
