Begin by peeling the navel oranges, grapefruit, and tangerines. Remove any seeds and slice them into bite-sized pieces. Combine all the citrus segments in a large bowl.

Whip the Goat Cheese
In a separate bowl, combine the goat cheese and heavy cream. Use an electric mixer or a whisk to whip until the mixture is smooth and creamy. Adjust the consistency with more cream if needed.

Make the Pepita Salsa Macha
In a skillet, heat the olive oil over medium heat. Add the pepitas and cook until they begin to pop and turn golden brown, about 3-4 minutes. Add minced garlic and chili flakes, cooking for another minute until fragrant. Season with salt and pepper, then remove from heat.

In the bowl with the citrus segments, gently fold in the whipped goat cheese until evenly distributed. Top the salad with the pepita salsa macha and sprinkle with fresh mint leaves.
