Prepare the ingredients
Gather all the ingredients and chop the vegetables.

Sauté the vegetables
In a large pot, heat the olive oil over medium heat. Add the onion, red bell pepper, celery, and garlic. Sauté until the vegetables are tender, about 5-7 minutes.

Add the rice and seasonings
Stir in the rice, Cajun seasoning, bay leaves, salt, and black pepper. Cook for another 2 minutes.

Add liquids and simmer
Pour in the diced tomatoes with their juice and the chicken broth. Bring to a boil, then reduce the heat and let it simmer for 15 minutes.

Add seafood
After 15 minutes, gently stir in the mahi mahi and shrimp. Cover and cook for an additional 10-12 minutes, or until the seafood is cooked through and the rice is tender.

Remove bay leaves, garnish with sliced green onions, and serve hot.
