Cooking Instructions

1

Prepare Teriyaki Sauce

In a small saucepan, combine soy sauce, honey, ancho chili powder, and minced garlic. Bring to a simmer over medium heat, stirring until honey dissolves. Remove from heat and let cool.

2

Prepare Mahi Mahi

Preheat grill to medium-high heat. In a shallow dish, mix panko breadcrumbs and cornmeal. Dip mahi mahi fillets in teriyaki sauce, then coat with breadcrumb mixture. Drizzle with olive oil.

3

Grill Mahi Mahi

Place the crusted mahi mahi on the grill and cook for about 4-5 minutes on each side until golden brown and cooked through.

4

Grill Shrimp

Toss shrimp in a mixture of olive oil, lemon juice, and a pinch of salt. Grill shrimp for about 2-3 minutes on each side until they turn pink and opaque.

5

Prepare Broccoli

While grilling, steam broccoli florets until tender, about 4-5 minutes.

6

Prepare Cilantro Rice

In a bowl, combine cooked rice, chopped cilantro, and diced mango. Mix well.

7

Prepare Herb Aioli

In a small bowl, mix mayonnaise with lemon juice and season with salt and pepper to taste.

8

Serve

Plate the grilled mahi, shrimp, and steamed broccoli alongside cilantro mango rice. Drizzle with firecracker chile sauce and serve with herb aioli.
